Brownie Ice Cream with Hot Chocolate Sauce
This really tastes like the naughtiest and most indulgent pudding ever - it is incredibly sweet and creamy, with delicious little bits of brownie and sticky hot chocolate sauce - but in reality it is packed full of natural goodness, and is oh so easy to make. I find it is lighter than normal ice cream and comes without any of the feeling too full/sugar crash side effects. Thanks to the banana in the base, whilst eating your pudding you will be supplying your body with potassium, vitamin B6 and iron, as well as stabilising blood sugar levels, aiding digestion and actually improving your mood - the trypotophan in the banana is converted into seratonin Inside your body!
The other amazing thing about this recipe is that you are extremely likely to have the ingredients on hand - the ice cream is simply banana and coconut milk (lots of healthy fat, Lauric acid and vitamins C, E and B), and the sauce is coconut oïl, maple syrup and raw cacao (the most incredible superfood which will flood your system with disease fighting antioxidants). And the brownie bites....

With it being quite hard to find healthy eating options when you are on the go, nakd's products are quickly becoming widely available, and wow do they taste good. On their website they already have some delicious recipes for muffins and truffles, so when I wanted to make ice cream it was the obvious choice to try nakd bars in the place of my raw chocolate brownies, but if you have the extra 5 minutes they would obviously work well too!
1 can full fat coconut milk
Equal parts coconut oïl, raw cacao and maple syrup (quantity depends on how many you are making it for)
3 nakd Cocoa Delight bars, roughly chopped
Blend bananas and coconut milk until completely smooth, add in half the nakd bars, then pulse the blender. Place the mixture and the remaning brownie bits into an ice cream maker.
When the ice cream is ready to serve, melt coconut oïl, maple syrup and raw cacao over a low heat until a smooth chocolate sauce is made. Pour over your ice cream and serve.
