Raspberry Avocado Kale Smoothie
This has to be one of my favourite smoothie recipes ever. It is so deliciously creamy you would never guess that it’s dairy-free. All the French markets are still overflowing with summer berries and I find myself stocking up daily. Not only are they the most amazing addition to smoothies, giving them such a sweet and fresh taste (and such a gorgeous colour), but they are bursting with antioxidants and compared to many fruits, they aren’t too high in sugar.
On the rare occasion I manage to find kale in Paris, I buy it by the bag-ful. My go to snack at the moment is kale chips which are so quick and easy to make. They are so nutritious and the perfect solution to any unhealthy salty craving that may have you reaching for the crisps and salted peanuts. Since kale is probably not the most appealing vegetable thanks to its cabbagey roots, adding it into smoothies is a great way to slowly introduce it into your diet. As long as you remove the stalks and blend it well I promise you can’t even taste it!
It is well-known these days that dark leafy greens are about as healthy as it gets, providing huge amounts of vitamins, minerals and fibre without the hefty calorie count. Kale is also particularly high in calcium which is key for maintaining bone density and preventing osteoporosis.
Just like kale, raspberries are low calorie but nutrient-dense. They are packed full of B vitamins (which are needed to produce and store energy, and maintain a healthy nervous system) and ellagic acid which is thought to have cancer fighting properties. The vitamin C found in raspberries supports a strong immune system whilst fibre keeps your digestive system happy.
All this goodness is supplemented by the healthy fats from the avocado and almond butter, and lots of plant protein from the chia seeds and cashews. So not only does this smoothie taste outrageously delicious, it is also amazingly nutritious and is sure to leave you glowing.
½ an avocado
1 small banana
2 cups raspberries
2 stalks of kale
0.5 cup cashew nuts (soaked in water overnight)
1 tsp maca powder
2 tsp almond butter
1 tsp chia seeds
1 cup water (amount depends on how thick you like it)
Wash the raspberries and kale, making sure you remove and discard the thick kale stalks, then blend all ingredients with the water until perfectly smooth, rich and creamy. Enjoy!
