I thought finishing uni would allow me to post a more steady and reliable stream of recipes, but since I am staying with a different friend every week and therefore don't have a fixed kitchen, I am struggling a little. When I finally went home last weekend I managed to rustle a few things up and these were definitely the highlight, so hopefully you'll consider them worth the wait and love them as much as I do.

These little balls may not look like much, but I think  they are one of my favourite recipes yet. They are deliciously sweet and gooey, and incredibly moreish. I think they taste even better after a few hours in the fridge - once they have firmed up they taste like cookie dough and I am yet to meet anyone who doesn't love eating raw cookie dough. I am unashamedly one of those girls who used to buy packs of pre-made cookie dough with no intention of ever cooking it, it would get munched down fresh from the fridge, usually in one sitting. YUM. But super unhealthy and actually quite gross. So this is the next best thing... no raw egg, no processed flours or bleached sugars, no blocks of butter, just a few simple and wholesome ingredients, a quick pulse in the blender and you're good to go. Admittedly the "chocolate chips" I used are cacao nibs... but they give a good bit of crunch in contrast to the smoothness of the dates. They are also packed full of natural goodness - high in potassium and magnesium which both support normal nervous system functioning and iron which aids cognitive function.

Ingredients:
(makes about 8 balls)

8 medjool dates
1 cup cashew nuts
1 tbsp lucuma powder
1 tbsp cacao butter
1 tbsp cacao nibs

Method:

Pit the dates and blend them until they form a chunky paste. Add cashews, lucuma and cacao butter to the mixer and blend until the mixture forms a dough. Finally add in the cacao nibs and pulse a few times to make sure they are evenly distributed before rolling the dough into ping pong ball sized balls. Keep them in the fridge for a few hours before eating.
