Cold Brew Coffee Smoothie | The Herb Diaries

I've been working to perfect this recipe for a while now and I've finally nailed it! There is nothing more delicious than a cold, creamy coffee smoothie - on a geeky level it is super time efficient to roll your breakfast and your morning pick up into one! I've sneaked some veg in, so don't be fooled by its brown colour. You can skip the date if you like your coffee a little less sweet, or add in a spoonful of raw cacao for an amazing morning mocha. Pour into a takeaway cup for breakfast on the go, or sprinkle with your favourite granola and a drizzle of almond butter for something a bit more substantial. 

Cold Brew Coffee Smoothie | The Herb Diaries

Ingredients:
Serves 1

50ml of cold-brew coffee (or an espresso shot, left to go cold)
1 frozen banana
1/4 frozen courgette
1 teaspoon almond butter
1 teaspoon coconut oil
1 teaspoon maca powder
1/2 teaspoon vanilla powder
100ml almond milk
1 medjool date or 1 teaspoon raw honey

Method:

SImply blend all ingredients in a high speed blender until smooth and creamy (if you don't have time to freeze your banana and courgette then make sure you add some ice when you blend, it is so much more delicious cold!). Sprinkle with your favourite granola/seeds/fruit/cacao nibs/nut butter and serve.
